In my wise old age, I have come to a realization about myself — I amterrible with due dates. Like, really terrible.
From library books, to movie rentals, even to turning in my taxes on time (which I at least mailed in this week at 4:50pm!), I have a pretty terrible track record of remembering to take care of things on time. This past weekend, when I was “spring cleaning” out my fridge, I realized the same holds true there. Eek. Let’s just say that I think I finally learned what happens to cilantro if it accidentally gets hidden at the back of the vegetable drawer for a month!
The good news was that, as I was taking an inventory of leftover ingredients in the fridge, I realized that I had the makings of a stir fry right in front of me. So I decided to make a simple chicken and asparagus stir fry for lunch, mixed with some garlic, scallions, soy sauce and honey. It took all of 15 minutes to make, and after I took the first tasty bite, I realized that I shouldtotally share it with you!!!
So I mustered up every inch of self-control to resist diving in, and instead set up my camera and snapped some photos for the blog. Oh the life of a food blogger — lots of lukewarm food after photo shoots! But even then, this simple stir fry absolutely hit the spot. So simple, but such great flavors. Plus, it’s healthy and literally comes together in a snap. So if you are a chicken and asparagus fan like me, or if the ingredients happen to be sitting there in your fridge, I highly recommend giving it a try!

Description
A quick and easy chicken and asparagus stir-fry.
Ingredients
Scale
- 1 Tbsp. soy sauce
- 1 Tbsp. honey
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces (about 1-inch)
- 1 Tbsp. olive oil
- 1 bunch asparagus, cut into bite-sized pieces
- 4 cloves garlic, thinly sliced
- 2 scallions, chopped
- 2 tsp. toasted sesame oil
- (optional) 1 tsp. toasted sesame seeds
Instructions
- In a small bowl or in a ziplock bag, combine soy sauce and honey. Add chicken, and stir to coat. Set in the refrigerator until ready.
- Meanwhile, heat oil in a large skillet over medium-high heat. Add asparagus, and saute until cooked, about 5 minutes. Remove the asparagus with a slotted spoon, and set aside.
- Remove chicken from marinade, and add to skillet. Saute until nearly cooked through (with the insides still slightly pink), about 5 minutes. Then add garlic, scallions, and the reserved marinade to the pan. Saute for an additional 2 minutes until the chicken is cooked and the garlic is fragrant. Remove from heat and stir in the cooked asparagus and sesame oil until combined. Serve immediately with rice, garnished with toasted sesame seeds if desired.

Made this tonight. Instead of honey using coconut agave (syrup) & adding in some brocolli & pepper. Also quinoa instead of rice. So yum!!

It’s crazy. I was looking up recipes on Pinterest; I typed in “chicken recipes” and this is the second thing that popped up. I was planning on cooking chicken with asparagus, and this just happened to be at the top of the page. I never would have thought to put it in a stir fry !

I made this last night and it was really good! I will definitely be making this again. I was worried it might be too sweet, but it definitely was not. The garlic at the end is a nice touch. I didn’t have scallions so I just sprinkled some chopped chives on top at the end.

Made this for dinner tonight! I marinaded the chicken in the soy sauce, honey, sesame oil, and garlic for a few hours before sautéing and it was delicious! I think we will double the soy sauce/honey next time for some extra sauce – it only increased the calorie content by about 10-15 cals. Thanks for the recipe!

I made this tonight and it was very good. Next time I will make 3-4 times as much marinade. There was none left in the bowl when I took the chicken out, and more would have been nice for the rice. I like my stir fry saucier, though it was still very tasty.

I’ve just tried this after seeing it on a FB 15 minute meal post – I added purple sprouting broccoli to the recipe (because I am both a greedy moo, and pretty hungry at the time) – absolutely delicious, and made within the time to brew of spot of jasmine tea.

Wow, so darn simple and full of flavor. Plus clean up is as easy as can be. Add put a little sraracha sauce on the side for s heat.

I made this last night and omitted/added a few ingredients! While the recipe was overall good- I had a few suggestions from those enjoying dinner with me (I thought I’d share them with you)
* Add salt
* Add a bit more soy sauce
* Add gingerWe added raw almonds to the finished product and paired it with Siracha sauce- it was amazing

I am a student. And I love making good food that takes minimum effort and time. I made this for lunch, while I cleaned the apartment, and did my laundry. It turned out really nice. I added a little bit of dried rosemary and ground pepper before marinating. Thank you for the lovely recipe.

Made this tonight! It was delicious and super easy, however the recipe asks you to set aside the asparagus after cooking it and doesn’t ever tell you to do anything else with it. I think I added it back too soon because it became very soggy. It didn’t really ruin anything except I love the slight crunch that comes with stir fry. Just a heads up!
Would have paired well with water chestnuts for additional crunch or cashews for additional nutrients,

Prepared this stir fry again last night. It was even better than the first time. Very good recipe especially in the spring with all the beautiful asparagus on the market. Didn’t have time to marinade the chicken but the soy sauce/honey coating really makes the chicken. It add a glaze to the chicken. Yum!

This is an excellent, tasty recipe that blends all the ingredients with amazing subtlety. For anyone who cares, the approx. calories are 430 TOTAL with the toasted sesame seeds…..430 divided by 2 to 4 servings is sooooo low before you even decide upon putting over rice or DOUBLING the sauce. If you decide to increase the sauce it will add an additional 69 calories (again divided by each serving!) for each Tbsp of honey and soy added. The average calories for 1/2 cup (normal serving) of the various rices is about 100 calories.
Even with the recipe divided into 2 servings with rice and doubling the sauce, the dish comes under 350 calories per serving with amazing nutritional value as a bonus to the great taste and ease of preparation.

Love this recipe and I’ve made it several times. I have always been confused about the reserved marinade. This time I made a second batch of marinade (50/50 honey and soy sauce) to use later. It is unclear whether the recipe calls for using the marinade the chicken has been sitting in (something I don’t do) or reserve some marinade before adding the chicken.
