They are a peanut butter lovers dream cookie!

We took our family favorite Gluten-Free Peanut Butter Cookies which have crisp edges, a soft & chewy center and are soooo yummy, reshaped them into a fun nutter butter shape and sandwiched some creamy peanut butter filling between two cookies.

They are thicker than the original and way better according to our taste testers!

I brought a batch to one of my kid’s sporting events and everyone went crazy for them! So of course, I had to add them to the website and share with you immediately!

And they couldn’t be easier to make!

All you need for the cookies are 10 ingredients.

butter or dairy free butter

brown sugar

cane sugar

vanilla extract

eggs

creamy peanut butter (we use natural peanut butter)

gluten-free flour (we used GF Jules, affiliate link)

baking soda

baking powder

and a pinch of salt

They are quick and easy to make!

The batter comes together in 4 simple steps:

  1. Mix the butter and sugars until really well creamed.
  2. Beat in the eggs, and then the peanut butter.
  3. Separately combine the flour, baking soda, baking powder and salt with a whisk or pastry cutter. You might be tempted to skip this step but it both combines the dry ingredients evenly and makes the flour finer, which helps give that soft and chewy cookie texture.
  4. Add dry ingredients to the wet ingredients and the batter is done!

Next is the fun part… making the cookies!

After chilling the batter for just 10-15 minutes so that it is easier to roll, roll the dough into teaspoon size balls.

Place the balls next to each so that edges are touching, and gently press the balls down with a fork, making the classic peanut butter cookie crisscross so that the two cookies become one.

I also recommend using teaspoon size balls otherwise the cookies get really large! You can see by the photo below that I tested a tablespoon, teaspoon and 1/2 tablespoon sized balls… and you can see the corresponding cookie sizes.

The teaspoon sized balls will give you approximately 40 cookies or 20 sandwich cookies.

While they bake, mix together the creamy peanut butter filling.

I give two filling options: one that is most like the classic Nutter Butter filling and one that is a healthier option.

The classic peanut butter cream filling is just 5 ingredients:

butter or dairy-free butter

creamy peanut butter

powdered sugar

milk of choice and

vanilla extract

The healthier peanut butter filling is just 2 ingredients:

creamy peanut butter and

maple syrup or honey.

Which ever you choose, just mix all the ingredients until well combined, smooth and creamy. You will want to eat the filling with a spoon, it is so tasty!

Let the cookies cool and spread on the peanut butter filling.

There are options when it comes to spreading the peanut butter filling on a cookie.

You can spread it using a knife or with the classic filling, you can roll it into a small ball then press it onto the cookie. That will give you the classic nutter butter look, the other a more homemade look.

Both taste luscious and yummy so it’s really up to you!

Top with a second cookie and you have a homemade gluten-free nutter butter!
