Make your favorite soup recipe in your Instant Pot! This Instant Pot Lasagna Soup is loaded with flavor and is so simple and easy to make. It has all of your favorite flavors from lasagna in soup form. Pair it with a side salad and breadsticks for an easy dinner.

What if I said you can have all the flavors of a classic lasagna without doing all the work? I know, the post title already gave it away so it’s not a surprise, but all that cheesy, saucy and pasta goodness can be yours in less than 30 minutes!

Lasagna Soup is my go-to recipe when I want a hearty pasta dinner but I don’t want to do all the work. No pre-boiling the noodles, no time spent layering all of the ingredients together and you don’t have to use a bunch of pots and pans to make it. This Lasagna Soup cooks in the Instant Pot in a fraction of the time it takes to make and bake a lasagna. Don’t get me wrong – when I have the time I love to make my favoritelasagna recipe, but this easy Instant Pot Lasagna Soup is one-pot cooking at its finest!

It has everything – the tender pasta, flavorful Italian sausage and you can top it with lots of cheese when you serve it. What I love best about this recipe is that it includes spaghetti sauce which thickens the broth and really gives the soup that classic lasagna flavor. You can do all of the precooking steps right in your Instant Pot and, once you’ve secured the lid, the soup only needs to cook for six minutes. It’s so fast and perfect for busy weeknights.

I love to add a simple side salad and a batch of my copy-cat Olive Garden breadsticks on the side to make it a complete meal for my family. Don’t have an Instant Pot? How to Make Lasagna Soup in an Instant Pot

  • First, turn on the saute setting and cook the Italian sausage.After a couple of minutes, add some chopped onion and garlic and cook them with the sausage until the sausage is no longer pink and cooked through.
  • Add canned Italian-seasoned diced tomatoes, beef broth, water, jarred spaghetti sauce, dried Italian seasoning and black pepper. Stir it all together.
  • Break the lasagna noodles into piecesand add them (uncooked!) to the Instant Pot with the rest of the ingredients. Secure the lid, close the steam vent, and cook on high pressure for six minutes.
  • When cook time is done, open the steam vent to do a quick release. Once the steam has escaped, open the lid and stir the soup.
  • To serve, I like to sprinkle shredded mozzarella cheese over the top of each bowl. You can fancy it up with some chopped fresh parsley, too!

Ways to Switch Up this Lasagna Soup Recipe!

Depending on your tastes you can switch up the ingredients for this soup. Here are some ideas:

  • For the Italian sausage, you can use mild or spicy depending on if you like a kick of heat.
  • Or you can swap out the sausage for ground beef, ground turkey or even ground chicken. It will change up the flavors and give it a different spin!
  • You can use your favorite jarred spaghetti sauce for this recipe. There are so many choices these days you could probably use a different kind every time you make this soup. Just be sure to use a tomato-based spaghetti sauce.
  • I love mozzarella cheese on top of the soup because it will melt and turn ooey-gooey but you can also add some grated Parmesan, Asiago, or Romano cheese for a little more cheesiness.
  • If I have parsley on hand I’ll chop some up to sprinkle on top of the soup, but you can also use chopped basil, too!

When you open that Instant Pot and you get a whiff of the soup, you’ll want to eat it straight from the pot! It’s just like opening the oven when you bake a lasagna but you didn’t have to spend over an hour in the kitchen to make it! I don’t know, but that time savings makes this soup even better, I think! It tastes like it simmered all day and your family will think you stood at the stove for hours to make it. Don’t worry – your secret is safe with me!

A quick and easy soup made in your pressure cooker with all the flavors of your favorite lasagna in a fraction of the time!

Ingredients

  • 1 Tbsp olive oil
  • 1 lb Italian Sausage
  • ½ c. diced onion
  • 4 cloves garlic
  • 2 cans basil garlic oregano diced tomatoes 14.5 oz each
  • 2 c. low sodium beef broth
  • 2 c. water
  • 24 oz jar spaghetti sauce
  • 2 tsp Italian Seasoning
  • ½ tsp ground black pepper
  • 8 oz lasagna noodles broken
  • 1 c. shredded mozzarella cheese
  • Parsley optional garnish

Instructions

  • Turn the Instant Pot to saute and add the olive oil. When hot, add the Italian sausage and cook, crumbling with a wooden spoon or spatula. Make sure to stir frequently to prevent the sausage from sticking to the bottom of the pot. When Italian sausage is partly cooked, about 2-3 minutes, add the onions and garlic and continue cooking for about 4-5 more minutes, until onions are soft and meat is no longer pink.

  • Add tomatoes, broth, water, spaghetti sauce, Italian seasoning, black pepper, and broken lasagna noodles. Place the lid on the pot and flip the valve to "sealing." Cook over manual high pressure for 6 minutes.

  • When the time is up on the Instant Pot, perform a quick release. When all of the steam has escaped and the pin on the lid has dropped, open the lid. Divide the soup into bowls and top each with a sprinkle of mozzarella cheese.
